Jon García has managed to combine his love for pastry with a good use of Instagram and the rise of home deliveries to make a name for himself in the emerging world of cheesecakes. He took advantage of the excess time provided by the lockdown to perfect the recipe for Basque-style cheesecake, one of his great passions. He analyzed how some of the best national cheesecakes were made, such as those from La Viña or the Estimar restaurant, to create a successful recipe of his own that has led him to success.
García, who had worked in the pastry section of restaurants such as El Celler de Can Roca, started this adventure during the pandemic at home and soon his friends, fans of the cakes he sent them to validate his recipe, took it upon themselves to spread how delicious his cheesecake was. In a few weeks, and thanks to the account opened on Instagram with the Jon Cake brand, orders began to pour in, with 60 cakes delivered weekly to homes in just two months.
Now, Jon Cake has already reached a weekly volume of 450 cakes, which he makes in a workshop located on Assaonadors street, in the Born neighborhood, where a shop has also just been set up that will become a regular place of pilgrimage for cheesecake lovers.
Although online sales have allowed Jon Cake to take off, there are reasons to visit his shop, such as being able to get one of the very limited edition cheesecakes, since only ten units are made of some cheese varieties ---such as smoked cheddar, Camembert, cabrales or truffled savarin. In addition, Jon García will also soon offer another hit at his Born shop, in this case from American pastry, the brownie, which he is already researching.
In the establishment, opened just a few days ago, you can also buy the three classic cheesecakes that García has popularized on social media over the past pandemic year: the Jon Cake, the goat cheese, and the chocolate cake. The formula García devised allows the cakes to travel very well to customers' homes; once there, they can be left to temper for a few hours before consumption or accelerate the characteristic creaminess of the interior with a few seconds of heat in the microwave.
Jon Cake's cheesecakes can be purchased in three formats costing 12 euros (for two or three diners), 20 euros (for four or six), or 30 euros (for 8 to 10 people). The store is open from Tuesday to Sunday.
