The brewery Damm makes its first foray into old-style sour brewing hand in hand with the Roca brothers and the creation of Duet, the brand's new sour beer. The result is a sour ale, a sour beer, balanced and very gastronomic suitable for pairing with fish, seafood and other sea products, and in which Damm's master brewers have worked for the last two years side by side with El Celler de Can Roca.
The new beer Duet is made with barley malt wort and white Grenache grape must from the Terra Alta region, to which lactic bacteria (Lactobacillus) are added to provide acidity and Ale yeasts to complete its fermentation. This will be Duet's distinction in the market since some traditional sour style beers are made with fruit ---usually red fruits--- to balance the sour point, an element that the Roca brothers have replaced with Grenache.
Josep Roca, sommelier of El Celler de Can Roca, explained that the grape not only provides complexity, verticality and a silky texture, but also gives freshness, "the Mediterranean touch". In line with the strategy of the Damm company and its commitment to the culture and sustainability of the Mediterranean, in addition to incorporating a new brewing method.
The new Duet beer is available in Damm's online store and will arrive in restaurants and commercial establishments in the coming days. Next week it will be unveiled at Damm's stand at the Fòrum Gastronòmic Barcelona.
